Menemen

A softly set Turkish-style breakfast pan for four, built from green pepper, reduced tomato and six eggs. Onion is an explicit option, never a universal rule.

Ingredients

  • 6 large eggs
  • 600 g ripe tomatoes, diced
  • 3 long green peppers / about 180 g, sliced
  • 150 g onion or shallot, optional
  • 30 g butter, or 30 ml olive oil
  • Fine salt, to taste
  • Black pepper, to taste
  • Pul biber, optional
  • Crusty bread, to serve

Three essential steps

  1. Slice the peppers and dice the tomatoes. If using onion or shallot, chop it finely. Crack the eggs into a bowl and keep the bread close.
  2. Melt the butter or warm the olive oil in a wide pan over medium heat. Soften the peppers without scorching; add the optional onion and cook until translucent.
  3. Add the tomatoes and cook for 10–15 minutes until thick rather than watery. Lower the heat, fold in the eggs to form soft curds, season and serve immediately with bread.
