Tacos al Pastor
Achiote-marinated pork, charred pineapple, white onion, cilantro and lime — staged by a pineapple whose sombrero is larger than the extractor hood.
Ingredients
- 600 g pork shoulder, thinly sliced
- 40 g achiote paste
- 4 guajillo chiles, stemmed and soaked
- 300 g pineapple, divided
- 1 medium white onion / 150 g
- 3 garlic cloves
- 120 ml orange juice
- 30 ml white vinegar
- 1 tsp dried oregano
- 1 tsp cumin
- 1½ tsp salt
- 12 small corn tortillas
- 25 g cilantro
- 2 limes
- Salsa, to serve
Three essential steps
- Blend the achiote, guajillo, half the pineapple, garlic, orange juice, vinegar, oregano, cumin and salt. Coat the pork and marinate for at least two hours.
- Cook the pork in hot batches until browned and caramelized. Char the remaining pineapple separately.
- Warm the tortillas and assemble with pork, charred pineapple, white onion, cilantro and fresh lime.
