Tacos al Pastor

Achiote-marinated pork, charred pineapple, white onion, cilantro and lime — staged by a pineapple whose sombrero is larger than the extractor hood.

Ingredients

  • 600 g pork shoulder, thinly sliced
  • 40 g achiote paste
  • 4 guajillo chiles, stemmed and soaked
  • 300 g pineapple, divided
  • 1 medium white onion / 150 g
  • 3 garlic cloves
  • 120 ml orange juice
  • 30 ml white vinegar
  • 1 tsp dried oregano
  • 1 tsp cumin
  • 1½ tsp salt
  • 12 small corn tortillas
  • 25 g cilantro
  • 2 limes
  • Salsa, to serve

Three essential steps

  1. Blend the achiote, guajillo, half the pineapple, garlic, orange juice, vinegar, oregano, cumin and salt. Coat the pork and marinate for at least two hours.
  2. Cook the pork in hot batches until browned and caramelized. Char the remaining pineapple separately.
  3. Warm the tortillas and assemble with pork, charred pineapple, white onion, cilantro and fresh lime.
